Previous articleNow, I introduced how to cook delicious rice using a rammed earth oven.
This time, I will explain how to care for each part.
The "soot" and "scorch" that occur every time you use them, as well as the "pots and lids" that you use every day.
The key is to have "easy habits" that don't put a strain on your tools. Every effort makes the next meal more enjoyable.
Basics of care
・Let it cool completely before doing it.
・Dry thoroughly without leaving any moisture behind.
・Do not rub too hard (the inside of the pot is fluorine treated)
Parts of a rammed earth oven
・Main body (rammed earth part): “Outside/exterior of the furnace” made of hardened layers of soil and stone
・Kettle (aluminum pot): “Pot” for cooking rice
・Kettle lid (wooden lid): Wooden “lid”
These three have different care methods. The basic rules are: ``Do not wash the main body,'' ``Wash the pot every time,'' and ``Do not leave the wooden lid wet.''
Basic routine immediately after use
① Cool down
②Remove the pot and wooden lid from the main body
③Main body: Remove soot with a brush and wipe dry (wipe wet if necessary)
④Kettle: Wash with neutral detergent + soft sponge
⑤ Wooden lid: Basically wipe dry (wash gently if necessary)
⑥Let each one air out and dry completely.
How to care for each part
Maintenance of the main body (rammed earth part)
everyday life
・Blow away soot from inside the main unit and around the fuel stand with a dry brush (soft brush).
・Wipe the outside with a dry cloth, picking at the soot without spreading it.
*The main body cannot be washed with water at all times.
If there is dirt or oil splatter
・Wipe with a damp cloth
・After wiping, wipe dry and dry thoroughly in a well-ventilated place.
If it is very dirty
・Please wash gently with a sponge using a neutral detergent.
・After using detergent, wipe off the detergent with a wet cloth, then wipe with a dry cloth → Dry thoroughly.
*The key is not to rub too hard.
Caring for the pot (aluminum pot)
The pot is a part that must be washed every time. The inner surface is treated with fluorine, so handling it without damaging it is the key to its long life.
How to wash each time
・Wash gently with neutral detergent + soft sponge
・Rinse well and wipe dry immediately
・Do not stack them while wet.
NG
・Use of metal scrubbing brush/cleanser (not allowed)
・Rubbing too hard
・Avoid using aluminum pots in the dishwasher.
When you are concerned about stickiness
・Soak it in water (or lukewarm water) for a while to soften it, then gently remove it with a soft sponge.
Caring for the pot lid (wooden lid)
everyday life
・Basically dry wipe
・If it gets dirty, wipe it with a tightly wrung out cloth and wipe it dry immediately → air dry it
*Avoid leaving it wet or soaking it for a long time.
If you are concerned about the smell of wood
The lid of the pot is made of wood, so the wood scent may transfer to the rice when you first use it. If you are concerned, please try the steps below.
- Gently wash the lid with a neutral detergent, rinse thoroughly and dry.
・Pour water into an aluminum pot, cover with a wooden lid, and boil the water 2 to 3 times.
*In this case, you can heat the aluminum pot by placing it on a stove such as a gas stove (do not place the stove itself on the stove).
Regarding first use
・No dry heating or seasoning required.
Storage tips
・Dry the main body (rammed earth part) thoroughly and place it in a place where there is ventilation.
・Dry the pot and wooden lid completely before storing.
・If you store it on a shelf, it is safe to put a desiccant together.
The more you use tools that use fire, the more their expression deepens, and the more they become familiar with your daily life. A ``rammed earth oven'' is also a tool that can grow beautifully for a long time by accepting soot and burntness as a ``taste'' and maintaining it in a natural manner. We hope that today's care will make your next meal more pleasant and delicious.
